I cannot tell you the number of times I have seen people talking about overnight oats – Pinterest, friends, Facebook, my virtual boot camp, you name it…they are hyping those bad boys up to be super easy and delicious. But I gotta tell you, I was kind of a skeptic, lol!
I’m not really sure why other than to say the thought of putting oats in the fridge overnight and them magically not tasting like cardboard the next day seemed a little farfetched to me. #justkeepingitreal
But…..how was I ever going to know if I didn’t give them a whirl? And let’s be honest, not a lot is lost if they turn out like poo and this girl can always eat eggs! Actually, that is just what I did since I decided to make Sienna the guinea pig of the overnight oats experiment. Yep, that happened! Good news though – both my eggs and her oats were delicious, we even swapped meals halfway through….and by swapped I mean I basically took them from her and gave her my eggs…..
Anyway, the verdict is in and our oats recipe is a keeper! Super simple to make and the perfect grab and go meal for really any time of the day. Hope you enjoy as much as we did.
Bottoms Up Overnight Oats
- 1/2 cup frozen fruit (of your choosing), thawed
- 1 teaspoon honey
- 1/2 cup rolled oats
- 1 tablespoon chia seeds
- 3/4 cup almond milk

- Using at least a 12.5 oz jar, place the fruit in the bottom and mash up until mostly pureed.
- Add remaining ingredients in the following order: honey, rolled oats, chia seeds, and almond milk. No need to stir, just put the lid on and place in the fridge overnight.
- Store for up to 4 days. Enjoy cold.
